FIESTA CHICKEN AND RICE Jane Miles 10" Dutch Oven 9 Bottom Briquettes 15 Top Briquettes Serves: 4 In a 10" Dutch oven mix together 1 can (10¾ ounces) Cream of chicken soup, 1 cup salsa or Picante Sauce, 1 can (15¼ ounces) undrained whole kernel corn and ¾ cup uncooked long grain white rice. Place 4 cleaned boneless, skinless chicken breast halves (about 1 pound). Sprinkle Paprika over chicken. Bake with 9 charcoal briquettes on the bottom and 15 charcoal briquettes on the top for 45-60 minutes or until chicken is no longer pink and rice is done. Sprinkle with ½ cup (2 ounces) Cheddar Cheese.
