In a medium bowl combine 4 large eggs, beaten; ½ cup finely chopped onion; ½ cup grated Parmesan cheese; ½ cup oil; ½ teaspoon parsley flakes; ½ teaspoon salt; ½ teaspoon celery salt; ½ teaspoon dried whole oregano; ¼ teaspoon garlic powder. Beat ingredients well. Add 1 cup biscuit mix and 3½ zucchini, thinly sliced with peel. Stir well. Turn into a greased 12" Dutch oven. Sprinkle with ¼ cup grated Parmesan cheese. Bake with 10 charcoal briquettes on the bottom and 16 charcoal briquettes on the top for about 20 minutes. Remove bottom briquettes and cook an additional 10 minutes or until browned. Cut into squares to serve. |
